
Tim and I have made it through two years as a married couple and we both still like each other and there have been no major catastrophes. I guess we made the right decision. I am still completely in love with my Timmy. OK enough mushy stuff. Let's move on to a tastier topic.....cake! As some of you may or may not recall we had a very tasty wedding cake prepared by the
Chantilly Mansion where we had our Utah Wedding reception. The layers were banana and chocolate. The chocolate was good but the banana was excellent! In fact for any occasion calling for a cake since this reception (birthday, anniversary, etc.); Tim has requested that it be a banana cake. I have tried several recipes but was not able to recreate the tastiness of our wedding cake. I finally admitted defeat and in an act of desperation e-mailed the good people at the
Chantilly Mansion asking for the recipe with little hope of reply. To my great joy I received a
reply a few days later with the coveted recipe! I have included the same recipe below so that it might not be lost. Tim and I both look forward to having a piece of wedding cake every year as a small part of our anniversary celebrations. Hope you enjoy it!

Frosted Banana Bars
½ c butter, softened
1 1/2 c sugar
2 eggs
1 c sour cream
1 t vanilla extract
2 c flour (use 1 c wheat and 1 c white if desired)
1 t baking soda
½ t salt
1 1/2 c mashed banana (about 3 bananas)
Preheat oven to 350. Grease a 17x 12 baking sheet. Cream the butter and sugar together. Add the eggs one at a time. Stir after each egg. Mix in the sour cream and vanilla. Stir in the flour, soda and salt. Add the mashed bananas stir well. Spread evenly into prepared pan. Bake for about 15 minutes, or until a toothpick inserted in the center comes out clean. Watch closely; they turn from white to brown quickly. Cool completely and frost. Store frosted bars in the refrigerator. (I poured into two 9-inch cake pans and baked for 20 minutes)
Fluffy Cream Cheese Icing (obviously not used on our wedding cake but tasty)
¼ c butter
8 oz cream cheese, softened
¾ c powdered sugar
8 oz Cool Whip, thawed
1 t vanilla
Cream the butter. Add the cream cheese and powdered sugar. Beat until smooth. Beat in the Cool Whip and vanilla.
*Use this icing on any cake or fruit pizza.
